Simply Orange Cake


A big Hiiiiiiii to everyone... Resuming after a long refreshing India visit. I do have couple of recipes in store and will share soon :)
Today I prepared the delicious and juicy ORANGE CAKE. Sometime last year while having a Sunday Brunch at Theobroma in Mumbai, I had stumbled upon a mouth watering piece of orange cake, which I crave till date. So it inspired me to try and have a go at this recipe. The piece of cake should be super soft and melt in your mouth instantly "just Yuuumm", though the best feature, I feel, is the strong citric aroma, so one smell will drive you to have a bite instantly. It is not very difficult to prepare, just needs eye on details.

Cooking time :35 mins
Serving:
Ingredients:
Cake
1. 170 g plain flour
2. 11/2 tsp baking powder
3. 1/2 tsp baking soda
4. 1/2 tsp vanilla extract
5. 100g butter
6. 75g caster sugar
7. Zest of 2 oranges
8. 2 eggs
9. 4tsp milk

Syrup
1.250 ml fresh orange juice(strained)
2.75g caster sugar

Instructions:
Syrup
1.In a small pan add orange juice and dissolve sugar under low flame. Continue till it turns to a syrup (Would need about 10 mins).

Cake:
1.Start by preheating the oven to 180ยบ C. 
2.Prepare a 20cm cake pan by buttering the inner walls. 
3.Mix the flour,baking powder,baking soda,salt in a bowl.  Keep aside.
4.In a large bowl add softened butter,vanilla extract and sugar ,whisk until it is fluffy.Then add the eggs and whisk.
5.Now add orange zest,then the flour mixture in 3 batches,and mix well between the batches, then add the milk.
6.Spoon in the mixture to the pan and bake for 35 mins.
7.Remove from the oven, but do not yet take out the cake  from the pan.
8.Peirce the top surface of the cake all over with skewer and pour syrup over hot cake.
9.Then leave aside, to cool down.
Note:
  • You can use butter paper instead of greasing the pan
  • The syrup quantity seems to be a lot,don't worry it will be soaked by the cake
  • If you are baking cake for the first time in the oven,use your middle rack to bake,cause if you use the topmost rack your cake might burn.
