Here comes the most satisfying savory dish you can have during winter isThe Wanton Soup. You all might think I am posting another Chinese dish, trust me you will thank me if you prepare and have this dish. These were my favorite take out dish in Shanghai during my stay there. The non availability of the dish which one love to eat in the current location , this is how the craving for eating the that particular dish will inspire one to recreate the dish. The non availability of authentic Chinese food inspired me to recreate those dishes.At first attempt I recreated the dish which taste 90% like the one we get in Shanghai.
You will find several small joints in every road in china which prepares varieties of wanton soup. These are simply amazing to taste and a stomach filler. In India although Chinese food is popular, but not authentic. No offense to the Big names as I haven't tried many Big named Chinese restaurants.
In most parts of China these wanton soup is primarily made with Pork as it is a staple meat in China. I have prepared these wantons with Chicken and one can hardly differentiate if the combination of flavors are right. This dish will help one to warm up during winter.
Super delicious hearty soup
Wanton wrappers are also available in the market.
Ingredients:
- All purpose flour
- Rice Flour
- 250 gm of boneless Chicken
(From the thighs preferably)
- 2 Eggs
- 2 tsp grated garlic
- 1 tsp grated ginger
- 2 tsp light soy sauce
- 2 tsp dark soy sauce
- Generous amount of chopped
Spring onions
- 1 finely chopped onion
- 1 tsp of whole Cumin seeds
grounded
- 1 tsp Fennel seeds grounded
- 2 tsp Chopped coriander
leaves
- 1 tsp freshly grounded black
pepper
- 1 tsp grounded white pepper
- Chicken Stalk
- 1/2 cube of Maggi instant
chicken bouillon
- 2 tsp of Chili bean sauce / replace with chili oil and dash of Sichuan pepper(triphal)
- 2 tsp refined oil
- salt as per taste
Instructions:
Wrapper:
- In a bowl add the flour , egg and mix it well
- Add water little by little
- Start kneading the dough by adding some flour dust on the counter
- The dough should be medium soft
- Make the dough into half, keep the other half and cover it with a damp cloth
- Start rolling out the remaining dough to a thin sheet
- While rolling out the dough, dust the surface and the sheet with flour
- Cut the sheet into equal square
- Dust each sheet and pile up the whole set. Wanton wrappers are ready.
Filling:
- Grind the boneless chicken in a food processor
- Add the finely chicken ,grated garlic, grated ginger, both light and dark soy sauce, 1 egg, chopped spring onion, Black and white pepper powder, salt and 2 tsp of refined oil. Mix them all well. Filler is ready
Assembling:
- Take a teaspoon amount of the filler and place it on the middle of the wrapping sheet
- Damp the two sides of the sheet as per the image
- Seal the sheet with the other corners as in the video
- Apply little water on the ends and twist the ends press both the corners together to form a shape. Follow the video to understand the folding better
